Jeffrey Trent, the most down to earth chef around! He’s known around here as the Kitchen Manager of the Juan Tabo location. His expertise and direction keeps the kitchen running smoothly and he definitely knows how to roll out one delicious dish after the next! Read on to get to know the guy who keeps those bellies happy.
When did you realize the Culinary Arts was your professional passion?
“When I saw that I could envision flavor profiles in my head and execute them almost exactly. Then what was ‘just a job’ while I was in college became the craft I was enamoured with.”
Have you ever cooked for anyone famous?
“Michael Fassbender, Maggie Gyllenhaal, former Governor Bill Richardson and other state governors, the cast and creators of Breaking Bad, Lajon Witherspoon, Vince Hornsby, and Morgan Rose of Sevendust. My honored favorites were Lemmy, Phil, and Mikkey of the all powerful Motorhead!”
What do you think would surprise most people about O’Niell’s Kitchen?
“That we are as much of a scratch kitchen as we are. Also, our approach to ‘Pub Fare’ is almost identical to the mindset of fine dining. Once the bar is set, we never lower our standards and deliver consistency to our guests.”
What menu item do you wish more people would try?
“Chicken and Waffles. We have a spin on it I feel is fairly unique!”
How do you come up with new special dishes everyday?
“I look at seasonal flavor profiles and try to offer different items that you wouldn’t see in a pub setting. Like, falafel, tapanade, etc.”
What’s your guilty pleasure when dining?
“Duck or Risotto. If it’s there, I’m ordering it!”
What music is playing in your kitchen?
Depending on the day we have everything from Tejano and Spanish regional music to Rock and Metal like Black Sabbath, Alice in Chains, and Metallica. A wide range really. No one owns the stereo here.”
